Avocado & Kale Omelet

Make this kale and avocado omelet for a satiating, high- protein breakfast. Fiber-rich kale will keep hunger at bay for longer in this healthy omelet form.
Constituents

2 ladlesextra-virgin olive oil painting, divided
mug diced kale
1 teaspoon lime juice
1 teaspoon diced fresh cilantro
1 tablespoon unsalted sunflower seeds
2 large eggs
1 tablespoon low-fat milk
Pinch of swab
Pinch of crushed red pepper
Pinch of swab
ยผ avocado, sliced

Step 1
Beat eggs with milk and swab in a small coliseum. Heat 1 tablespoon oil painting in a small nonstick skillet over medium heat. Add the egg admixture and cook until the bottom is set and the center is still a bit watery, 1 to 2 twinkles. Flip the omelet over and cook until set, about 30 seconds more. Transfer to a plate.
Step 2
Toss kale with the remaining 1 tablespoon oil painting, lime juice, cilantro, sunflower seeds, crushed red pepper and a pinch of swab. Top the omelet with the kale salad and avocado.
