Chantilly Cake
Berry Chantilly Delight

Ingredients:

For the cake:

1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 teaspoons vanilla extract

For the Chantilly cream:

2 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract

For the berry filling:

2 cups mixed berries (strawberries, blueberries, raspberries)
1/4 cup granulated sugar

Directions:

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, one at a time.
In a separate bowl, combine flour, baking powder, and salt. Gradually add to the creamed mixture alternately with milk, starting and ending with the flour mixture. Stir in vanilla.
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool the cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
To make Chantilly cream, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
For the berry filling, mix the berries with granulated sugar and let sit for 10 minutes.
To assemble, place one cake layer on a serving plate. Spread with half of the Chantilly cream and top with half of the berry mixture. Place the second cake layer on top and repeat with the remaining cream and berries.
Serve chilled.
