Creamy Garlic Chicken Pasta
Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 teaspoon Italian seasoning
1 cup Parmesan cheese, grated
8 ounces pasta (linguine, fettuccine, or spaghetti)
1 tablespoon parsley, chopped for garnish
1/2 cup sun-dried tomatoes, chopped (optional)
Directions:
Season chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden and no longer pink in the center, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add heavy cream, chicken broth, and Italian seasoning. Bring to a simmer.
Reduce heat to low and stir in Parmesan cheese until melted and sauce is creamy.
Cook pasta according to package instructions; drain and return to the pot.
Slice the cooked chicken and add it to the skillet with the creamy sauce. Add the sun-dried tomatoes if using. Toss to combine.
Pour the sauce over the cooked pasta, tossing to coat evenly.
Garnish with chopped parsley before serving.
