Heavenly Pineapple Upside-Down Muffins
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, melted
1/2 cup milk
1 egg
1 tsp vanilla extract
1 cup pineapple chunks
1/4 cup caramel sauce
Directions:
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
In another bowl, mix the melted butter, milk, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Fold in the pineapple chunks gently.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Drizzle caramel sauce over the top of each muffin.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
