Air Fryer Lava Cakes
Ingredients:

  • 1/2 cup of semi-sweet chocolate chips
  • 1/4 cup of unsalted butter
  • 1/4 cup of powdered sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons of all-purpose flour
  • Pinch of salt
  • Cooking spray or melted butter, for greasing ramekins
  • Optional: vanilla ice cream and fresh berries for serving
    Directions:
  1. In a microwave-safe bowl, combine the chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Let it cool slightly.
  2. In a separate bowl, whisk together the powdered sugar, egg, and egg yolk until well combined.
  3. Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly.
  4. Stir in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.
  5. Generously grease two ramekins with cooking spray or melted butter.
  6. Divide the batter evenly between the prepared ramekins.
  7. Preheat your air fryer to 375°F (190°C).
  8. Place the filled ramekins in the air fryer basket and cook for 7-9 minutes, or until the edges are set but the centers are still soft.
  9. Carefully remove the ramekins from the air fryer using oven mitts.
  10. Let the lava cakes cool for a few minutes before running a knife around the edges and inverting them onto serving plates.
  11. Serve immediately with a scoop of vanilla ice cream and fresh berries, if desired.
