Cherry Cheesecake Pie

Ingredients:
For the crust:
- 2 ½ cups Oreo cookie crumbs (about 26 Oreo cookies)
- 6 tablespoons unsalted butter, melted
For the cheesecake filling:
- 8 ounces cream cheese, room temperature
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces Cool Whip (whipped topping)
For topping:
- 1 (20 ounce) can cherry pie filling
Directions:
To make the crust:
- Finely crush the cookies in a food processor. Add the melted butter and blend until the crumbs are moistened.
- Press the crumb mixture onto the bottom and up the sides of a prepared 9-inch springform pan. Lightly grease the edges of the pan with cooking spray and use a teaspoon to level the top of the sides.
- Place the pan in the freezer while you make the filling.
To make the cheesecake filling:
- In a large bowl, use an electric mixer to combine the powdered sugar and cream cheese until smooth.
- Add the vanilla extract and whipped topping, and continue mixing at low speed until well combined.
- Spread the filling on top of the chilled crust and spread it out evenly.
Topping:
- Top the cheesecake with the cherry pie filling.
Chilling:
- Chill the cheesecake until set, for at least one hour.
