For the Chicken:
1 whole chicken, cut into pieces (or use your preferred chicken parts)
Salt and pepper, to taste
1 cup buttermilk
2 large eggs
2 cups all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon smoked paprika (optional)
Vegetable oil, for frying


Step 1: Prep the Chicken

Season the chicken pieces generously with salt and pepper on all sides.
In a shallow dish, whisk together the buttermilk and eggs. Place the seasoned chicken pieces in the buttermilk mixture, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Step 2: Coat the Chicken

In another shallow dish, combine the flour, garlic powder, onion powder, paprika, cayenne pepper, and smoked paprika (if using). Mix well to combine.
Remove the chicken pieces from the buttermilk mixture, allowing any excess to drip off.
Dredge each chicken piece in the seasoned flour mixture, pressing gently to adhere. Shake off any excess flour.
Step 3: Fry the Chicken

In a large skillet or Dutch oven, heat enough vegetable oil to submerge the chicken pieces halfway, to a temperature of 350°F (175°C).
Carefully place the coated chicken pieces in the hot oil, skin side down if using bone-in pieces. Be cautious not to overcrowd the pan, frying in batches if necessary.
Fry the chicken for 10-12 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C) for bone-in pieces, or 175°F (80°C) for boneless pieces.
Transfer the fried chicken to a wire rack or paper towel-lined plate to drain excess oil. Allow it to rest for a few minutes before serving.
