Ferrero Rocher chocolates for that perfect finish

Chocolate Cake:
2 ½ cups all-purpose flour
1 ¾ cups white granulated sugar
1 cup unsweetened cocoa powder (Dutch process recommended)
2 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
¾ cup oil (canola or vegetable)
1 teaspoon pure vanilla extract
4 large eggs, room temperature
1 cup buttermilk, room temperature
1 cup hot water, steaming
Nutella Frosting:
2 cups unsalted butter, softened
½ cup Nutella
5 cups powdered sugar, sifted
½ cup unsweetened cocoa powder
¾ teaspoon salt
1 teaspoon pure vanilla extract
½ cup heavy cream
1 package of Ferrero Rocher, chopped (freeze until firm before chopping)
1 package of Ferrero Rocher, for decoration (optional)


Prepare the Cake:
Preheat your oven to 350°F (177°C). Grease three 8-inch cake pans and line with parchment paper.
In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In a separate bowl, combine oil, vanilla, eggs, and buttermilk. Gradually mix in the hot water.
Blend the wet ingredients into the dry until just combined. Evenly distribute the batter among the pans.
Bake for 25-28 minutes. Let the cakes cool in the pans for 10 minutes, then move to a cooling rack to cool completely.
Nutella Frosting:
In a mixer, beat the softened butter and Nutella for 3 minutes. Gradually incorporate the powdered sugar and cocoa powder, followed by the salt, vanilla, and cream until the frosting is fluffy.
Assemble the Cake:
Level the cake layers if necessary. Place the first layer on your cake stand, spread frosting, and add half of the chopped Ferrero Rocher.
Repeat with the second layer. Finish with the final layer, bottom side up for a flat top.
Cover the cake with a light crumb coat of frosting and refrigerate for 15 minutes to set.
Complete frosting the cake and decorate with additional Ferrero Rocher chocolates.
To Store:
Keep the cake in an airtight container in the fridge for up to 5 days. For longer storage, freeze slices for up to 30 days. Thaw for 1-2 hours before serving.
