S’mores Cake


For the Chocolate Cake:

2 cups all-purpose flour
1 cup granulated sugar
1 cup brown sugar, packed
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the Marshmallow Frosting:

1 cup unsalted butter, softened
2 cups confectioners’ sugar
1 teaspoon vanilla extract
1 (7-ounce) jar marshmallow creme or fluff
For the Graham Cracker Crumble:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For Garnish:

Mini marshmallows
Chocolate shavings
Extra graham cracker crumbs

Prepare the Chocolate Cake:

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.

Stir in the boiling water until the batter is smooth. The batter will be thin.

Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to wire racks to cool completely.

Make the Marshmallow Frosting:

In a large mixing bowl, beat the softened butter until creamy. Gradually add the confectioners’ sugar and vanilla extract, beating until light and fluffy.

Gently fold in the marshmallow creme until well combined. Set aside.

Prepare the Graham Cracker Crumble:

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles coarse crumbs.
Assemble the Cake:

Place one layer of the chocolate cake on a serving plate or cake stand. Spread a layer of marshmallow frosting over the top of the cake.

Sprinkle a generous amount of graham cracker crumble over the frosting.

Repeat the process with the remaining cake layers, frosting, and graham cracker crumble.
