• 2 cups mashed potatoes
• 1 cup shredded cheddar cheese
• 1/2 cup grated Parmesan cheese
• 1/4 cup chopped fresh herbs (e.g., basil, rosemary, thyme)
• 1/2 cup diced onions
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• Salt and pepper to taste
• 2 eggs, beaten


. Preheat your oven to 375°F (190°C) and grease a pie dish.
. In a bowl, combine the mashed potatoes, half of the cheddar cheese, half of the Parmesan cheese, and half of the chopped herbs. Season with salt and pepper. Press this mixture evenly into the bottom and up the sides of the pie dish to form the crust.
. In a skillet, heat the olive oil over medium heat. Add the diced onions and minced garlic, and sauté until they become translucent.
. Remove the onion and garlic mixture from the heat and mix it into the remaining herbs.
. Spread the onion, garlic, and herb mixture evenly over the potato crust.
. Sprinkle the rest of the cheddar and Parmesan cheese on top.
. Pour the beaten eggs over the cheese and herb mixture.
. Bake in the preheated oven for 25-30 minutes or until the pie is golden and the filling is set.
