Bruschetta with Burrata, Pesto, and Roasted Tomatoes

Ingredients:

  • 1 French baguette or rustic Italian bread, sliced
  • 2 tablespoons olive oil (for brushing the bread)
  • 1 pint cherry or grape tomatoes
  • 1 tablespoon olive oil (for roasting tomatoes)
  • Salt and freshly ground black pepper, to taste
  • 1–2 cloves garlic (for rubbing on the bread)
  • 1 cup fresh burrata cheese
  • 1/2 cup pesto (store-bought or homemade)
  • Fresh basil leaves, for garnish
  • Balsamic glaze (optional, for drizzling)

Instructions:

  1. Roast the Tomatoes:
    • Preheat your oven to 400°F (200°C).
    • Place cherry tomatoes on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
    • Roast for about 15–20 minutes, or until tomatoes are soft and slightly blistered. Set aside.
  2. Toast the Bread:
    • Brush both sides of the bread slices with olive oil.
    • Toast in a skillet, on a grill, or in the oven at 375°F (190°C) for 5–7 minutes, until golden and crisp.
    • While still warm, lightly rub one side of each toast with a cut clove of garlic.
  3. Assemble the Bruschetta:
    • Spread a spoonful of pesto on each toast.
    • Tear the burrata and place a generous amount on top of the pesto.
    • Add a few roasted tomatoes over the burrata.
    • Garnish with fresh basil leaves and a light drizzle of balsamic glaze if desired.

Tips:

  • For extra flavor, sprinkle a little flaky sea salt over the top.
  • You can prep the components ahead of time and assemble just before serving.

Perfect as an appetizer, snack, or part of a light lunch—this dish is fresh, creamy, and bursting with flavor. Want a homemade pesto recipe too?
